Fall is, arguably, the best season for baking as it is notorious for its abundance of seasonal ingredients. As the weather turns cooler, try out these four warm and comforting recipes that are perfect for the season.
Recipe 1) “Individual Apple Cranberry Crisps”
This delicious dessert is the perfect bite size treat that gives the flavorful tastes of apple and pecans.
Apple Filling ingredients
- 1/3 cup sugar
- 1 1/4 teaspoons cornstarch
- 3/4 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/8 teaspoon cloves
- 5 small peeled apples
- 1 cup fresh or frozen cranberries
- 1 tablespoon lemon juice
Pecan Crumble ingredients
- 1 cup flour
- 1 cup light brown sugar
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/8 teaspoon nutmeg
- 1/2 cup unsalted cubed butter
- 3/4 cup roughly chopped pecans
- Heavy cream for drizzling
To begin, make the apple filling in a large bowl. Whisk together sugar, cornstarch, cinnamon, salt and cloves. After all ingredients are fully mixed together, gradually fold in the apples, cranberries and lemon juice with a spatula. Once the apple filling is ready, preheat your oven to 350°F and place six heatproof ramekins onto a baking tray. For the pecan crumble, whisk together the flour, brown sugar, salt, cinnamon, ginger and nutmeg. Once combined, use your fingers to rub the butter into the dry mixture until it stays firm in your hands. Then divide the crumble over the filling and press down gently. Bake in the oven for 30 minutes or until the sides bubble over and the top is golden brown. Let the crisps cool for roughly 15 minutes and drizzle heavy whipping cream over top and enjoy!
Recipe 2) “Caramel Nut Tart with Chocolate”
This tart combines the best of both worlds with caramelized nuts and rich chocolate.
- 1 package of any pre-made pie dough
- 3 cups each nut: walnuts, pecans, silver almonds and pine nuts
- 1 cup white sugar
- 1/2 cup heavy cream
- 3 tablespoons butter
- 1 tablespoon vanilla extract
- 1 teaspoon salt
- 4 ounces bittersweet chocolate
Begin by rolling out the pie dough and pressing it into a 10-inch tart dish. Then, transfer to the refrigerator and preheat your oven to 350°F. While the dough is in the oven, start to prepare the nuts and add them in the oven onto a baking sheet for about 9 minutes or until they turn a light brown shade. On the stove, place a pot over medium heat to warm the sugar with water, whisking them together until they caramelize to become a deep golden brown color. Remove the pot from the heat and whisk in heavy cream, butter, salt and vanilla. Finally, stir the toasted nuts in until they are fully coated. Transfer the mixture from the pot into the dough from earlier and place into the oven for roughly 30 minutes or until the crust turns golden and the caramel begins to bubble. Immediately after it’s done in the oven, remove the tart from the pan and drizzle melted chocolate on top. Place back in the fridge for another 20 minutes, cut into slices and enjoy!
Recipe 3) “Pumpkin Bread”
This dessert has various fall flavors and is great to share with friends
Spiced Sugar Crust ingredients
- Butter for greasing pan
- 1 1/2 tablespoons white sugar
- 3/4 teaspoon pumpkin pie spice
Pumpkin Bread ingredients
- 2 1/3 cups flour
- 3 1/2 teaspoons baking powder
- 1 3/4 teaspoons pumpkin pie spice
- 1 teaspoon salt
- 3/4 teaspoon ginger
- 15-ounces pumpkin puree (not pumpkin pie filling)
- 1 cup brown sugar
- 1/4 cup white sugar
- 2/3 cup vegetable oil
- 2 eggs
- 3/4 teaspoon vanilla extract
Start by preheating your oven 350°F and set aside a 9×5-inch loaf pan greased with butter. In a small bowl, mix together the white sugar and pumpkin pie spice before coating the bottom of the pan with your pumpkin sugar mixture. In a larger bowl, whisk the flour, baking powder, salt, ginger and the same amount of pumpkin pie sauce as before. In a separate bowl, whisk more pumpkin puree, oil, eggs, vanilla and the same measurement of brown sugar until the combination is smooth. Combine both of the wet ingredient based mixtures with the dry ingredients until they blend together with a whisk in a bowl seamlessly, but be cautious not to over mix your batter. Drizzle pumpkin sugar mixture from earlier into the pan and bake for around 70 minutes. At the 35 minute mark, rotate the pan in the oven so both sides are evenly cooked. Continue baking until the timer is up (or until a knife comes out clean when poked in the center). Let the bread cool and enjoy!
Recipe 4) “Soft Batch Pumpkin Spice Cookies”
This recipe creates the softest cookies that are perfect for the fall season as it combines so many seasonal ingredients.
Cookie ingredients
- 1 tablespoon ground flax meal
- 2 tablespoons warm water
- 1/3 cup pumpkin purée
- 1/4 cup almond butter (the thick, stabilized kind, not the drippy, oily kind)
- 2 tablespoons softened unrefined coconut oil
- 1 tablespoon vanilla extract
- 1/3 cup muscovado sugar (or coconut or brown sugar)
- 3/4 cup gluten-free oat flour
- 3/4 cup blanched almond flour
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/16 teaspoon clove
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
Frosting Ingredients
- 1/4 cup almond butter (the thick, stabilized kind)
- 3 tablespoons pure maple syrup
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/3 cup chopped toasted pecans
To begin, in a large bowl, combine the flax meal and water and let the mixture thicken for roughly five minutes. Preheat your oven to 350°F. Combine the measured amount of vanilla, almond butter and pumpkin in with the flax meal. Whisk together while gradually adding in the sugar. Once fully mixed, continue to add oat flour, almond flour, spices, baking powder and salt. At this point, the dough should be at a flexible consistency, so you’re able to roll one-inch balls onto a baking sheet with room in between each ball. Place the sheet in the oven for roughly 10 to 13 minutes and once fully baked, wait another 15 to 20 minutes to cool. While the cookies are baking and cooling, you’re able to begin on the frosting. In a bowl, mix together the almond butter, maple syrup, cinnamon and ginger. Once everything is all set and ready, layer the frosting over the cookies,top with some pecans and enjoy!
